Wintertime Brie Recipe

Yield: 12 servings

Ingredients:
3/4 cup pitted dates, chopped
1 small apple peeled, cored, diced
1 small firm pear, diced
1/2 cup currants or dried cranberries
1/2 cup pecans, chopped
1/3 cup sweet wine (marsala or other dessert wine)
1 2-pound wheel Brie, well chilled

Instructions:
Combine dates, apple, pear, currants, pecans and wine. Set aside for at least two hours; add more wine as it is absorbed. Cut Brie in half horizontally to make two layers. Place one layer rind side down in serving dish. Spread with half of fruit mixture. Place remaining Brie on top with rind side facing up. Spoon remaining fruit mixture onto center top of Brie. Seal with plastic wrap and refrigerate up to two days. Bake uncovered at 350 degrees until cheese melts at edges, 25-30 minutes. (May be made with combination of summer fruits: peaches, apricots, nectarines.)
